Preheat the air fryer to 400°F (200°C) and the oven to 400°F (200°C). Prep all ingredients per instructions above.
Prepare the French fries: Soak the cut russet potatoes in a bowl of water for at least 20 minutes, then drain well. Once done, toss the potatoes with extra-virgin olive oil, garlic powder, paprika, salt, and black pepper.
Place the seasoned potatoes in the air fryer basket and cook at 400°F (200°C) for about 20 minutes, shaking or flipping halfway through, until crispy and golden.
Cook the bratwurst: Place the bratwurst on a baking sheet and bake in the oven until an internal temperature of 155°F (68°C) is reached (approximately 15-20 minutes).
Prepare the curry ketchup sauce: In a saucepan over medium heat, heat the vegetable oil.
Add the finely chopped onion and sauté until translucent, about 3 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant.
Add curry powder, paprika, cayenne pepper, salt, and black pepper, stirring for 2 minutes to toast the spices.
Pour in the ketchup and water, stirring well to combine. Simmer the sauce over low heat for 5-7 minutes, stirring occasionally.
Slice and serve: Once the bratwurst is cooked, slice it into bite-sized pieces. Pour the curry ketchup sauce over the sliced bratwurst and toss to coat. Serve immediately with air fryer french fries and pink lemonade.
