Instructions
Heat the oil in a nonstick pan over medium heat. Cook the scallions, ginger, and the curry powder until fragrant, 1 to 2 minutes.
Add the tomatoes and cook until beginning to burst, about 5 minutes.
Add the chickpeas and lime juice and season with a pinch of salt and pepper. Serve.
