Curried Tomatoes and Chickpeas

Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 4 Scallions sliced
  • 1 tbsp Fresh ginger grated
  • 1 tsp curry powder
  • 1 pint Grape tomatoes halved
  • 12 oz chickpeas (can) rinsed and drained
  • 1 tbsp Lime juice

Instructions

  • Heat the oil in a nonstick pan over medium heat. Cook the scallions, ginger, and the curry powder until fragrant, 1 to 2 minutes.
  • Add the tomatoes and cook until beginning to burst, about 5 minutes.
  • Add the chickpeas and lime juice and season with a pinch of salt and pepper. Serve.
