Place the carrots in a sauté pan and cover with water. Bring to a simmer over medium heat and cook until tender, about 10-15 minutes. Then drain well.
Melt the butter in the sauté pan over medium heat. Add the carrots, curry powder, and honey. Season with salt and pepper, then sauté for about 5 minutes.
Toss until the carrots are lightly coated in oil and seasonings. Arrange them in a single layer. Roast the carrots for about 20 minutes until tender, or more if needed.
