Cuban Picadillo

Ingredients

  • 3/4 lb Ground beef
  • 1/2 cup Onion diced
  • 1/4 cup Green bell pepper diced
  • 4 cloves Garlic finely chopped
  • 2 tbsp Ground cumin
  • 1 tbsp Paprika
  • 1 cup Chicken broth
  • 4 tbsp Gold raisins optional
  • ½ cup Green olives halved
  • 2 Naan bread
  • 2 tsp Extra-virgin olive oil

Instructions

  • In a non-stick pan over medium heat, brown the ground beef breaking it up into smaller pieces with a spatula. Add in the onion, peppers, garlic, cumin, and paprika. Season well with salt and pepper.
  • Cook for about 5 minutes, until the vegetables are soft. Add the broth, raisins (if using), and olives. Simmer until about half of the liquid evaporates, about 10 minutes.
  • Heat a non-stick pan over medium heat. Drizzle the naan with oil. Warm the naan on both sides to a golden brown in the pan. Cut into portions.
  • Taste and adjust the seasonings however needed. Serve with naan.
