In a pot of salted boiling water, cook the gnocchi according to the directions on the package. Drain well and set aside.
Heat the oil in a skillet or non-stick pan over medium heat. Add the sausage, onion, garlic and seasoning; sauté until browned.
Optional: Spread some of the oil from the sun dried tomato jar onto the bread and season with salt and pepper and parsley if desired.
Add in the spinach and cook until wilted. Season with salt and pepper. Add in the sun dried tomatoes, cream, and gnocchi. Sauté until the cream reduces to smooth and creamy.
Remove from heat, toss in the parmesan, taste and adjust the seasoning with salt and pepper if needed. Garnish with parmesan, sun dried tomatoes, and parsley. Serve immediately with bread.
