Country Steak

Ingredients

  • 1 cup All-purpose flour
  • 2 Eggs beaten
  • 1.5 cups Breadcrumbs
  • 16 oz Cube steaks 4 oz portions
  • 1/4 cup Vegetable oil
  • 4 tbsp Sour cream
  • 2 tbsp Fresh chives chopped

Instructions

  • In 3 separate bowls, place the flour, egg, and breadcrumbs seasoned with salt and pepper.
  • Pat cube steaks dry with a paper towel, removing as much moisture as possible. Season both sides with salt and pepper.
  • Heat the vegetable oil in a heavy skillet or nonstick pan over medium-high heat.
  • Coat the steaks in the flour, then in the egg, then into the breadcrumbs; pressing down to make sure the breading adheres to the steak.
  • Place steaks into the pan and fry for 3 to 4 minutes on each side or until golden brown.
  • Remove the steaks from pan and drain on paper towels. Season with salt right away.
  • In a bowl, mix together the sour cream and chives. Season with salt to taste.
  • Spoon the sour cream on the steak before serving.
