Ingredients

Cottage Cheese Toast with Tomato and Onion

  • 2 slices Your choice of bread
  • 1/2 cup Cottage cheese
  • 2 TBSP Red onion chopped
  • 1 Tomato small diced
  • 1/2 tsp Extra-virgin olive oil
  • 1/4 tsp Dried oregano

Cottage Cheese Toast with Lox

  • 2 slices Your choice of bread
  • 1/2 cup Cottage cheese
  • 2 oz Lox cured salmon, chopped
  • 2 TBSP Red onion chopped
  • 1 tsp Fresh dill roughly chopped

Seasoning

  • Salt to taste
  • Black pepper to taste

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Toast the bread.
  • Spread a generous amount of cottage cheese evenly over each slice of the toasted bread.
  • For the Cottage Cheese Toast with Tomato: Spread the chopped onion and diced tomato evenly over the cottage cheese. Drizzle a little olive oil over the cottage cheese layer. Sprinkle it with salt, black pepper, and oregano to taste.
  • For the Cottage Cheese Toast with Lox: Place lox on top of the cottage cheese. Place the thinly sliced onion on the lox. Garnish with dill, and season with salt and pepper to taste.
  • Serve the cottage cheese toast with orange juice.
