Prepare all ingredients as noted.
Heat the water to 175–185°F (80–85°C), just before boiling. Remove from heat, add the green tea bags, and steep for 2–3 minutes before removing and discarding the tea bags.
Toast bread slices until golden and crisp.
Spread cottage cheese evenly over the toasted bread.
For the tomato and onion toast, top with tomato and red onion, drizzle lightly with olive oil, and season with oregano, salt, and black pepper.
For the lox toast, top with lox, red onion, fresh dill, salt, and black pepper.
Combine apple slices, dates, toasted almonds, and chia seeds.
Serve cottage cheese toast with fruit and green tea.
