Ingredients

Cottage Cheese Toast – Tomato and Onion

  • 2 slices Your choice of bread
  • ½ cup Cottage cheese
  • 1 Tomato small diced
  • 2 TBSP Red onion chopped
  • ½ tsp Extra-virgin olive oil
  • ¼ tsp Dried oregano
  • Salt to taste
  • Black pepper to taste

Cottage Cheese Toast – Lox

  • 2 slices Your choice of bread
  • ½ cup Cottage cheese
  • 2 oz Lox smoked salmon, chopped
  • 2 TBSP Red onion chopped
  • 1 tsp Fresh dill roughly chopped
  • Salt to taste
  • Black pepper to taste

Fruit

  • 1 cup Mixed fresh fruit e.g. berries, banana, kiwi, washed and prepared as needed

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prepare all ingredients as directed above.
  • Toast the bread slices until golden brown.
  • Tomato and Onion Toast: Spread cottage cheese evenly on toasted bread. Top with diced tomato and red onion. Drizzle with olive oil, season with salt, black pepper, and oregano.
  • Lox Toast: Spread cottage cheese evenly on toasted bread. Top with chopped lox, red onion, and fresh dill. Season with salt and black pepper.
  • Prepare sides: Wash and cut fresh fruit as needed. Pour cold orange juice into glasses.
  • Serve: Arrange the cottage cheese toasts on plates with fresh fruit and glasses of orange juice. Enjoy your breakfast!
