Prep the ingredients per the instructions above.
Make the guacamole: Mash the avocado in a bowl with a fork; and add the cilantro, onion, garlic, and lemon juice. Season with salt and pepper to taste. Refrigerate until ready to use.
Heat the oil in a saute pan on medium heat. Saute the onion and pepper until softened. Add in the chorizo and brown while breaking it up into smaller pieces until it is cooked through. Remove from the heat.
Place a tortilla on a nonstick skillet over medium heat. Add Mexican cheese blend, chorizo, and then more cheese on top. Fold in half. Cook until golden brown, then flip to the other side and cook until the cheese is melted and that side is golden brown.
Mix together the ingredients for the spritzer. Serve over ice if desired.
Cut into wedges; serve with guacamole and chips, salsa verde and sour cream if desired, and spritzer.
