Heat a nonstick pan over medium heat. Add in the beef and cook until browned breaking it apart into smaller pieces with a spatula until it is no longer pink and cooked through. Add the peppers and onion and saute for 4 - 6 minutes or until the vegetables are soft. Remove the pan from the heat, drain the excess fat, and mix in the cheese.
Heat the oil In a nonstick pan on medium heat. Crack the eggs into the pan, once the whites of the eggs begin to firm up gently flip the eggs over using a spatula. Cook for 1 minute more.
Layer the wrap with the beef mixture and eggs. Season with salt and pepper to taste. Fold in the ends and roll up. Cut in half and serve with pineapple slices.
