Chop Salad

Ingredients

  • 6 cups Romaine lettuce chopped into small pieces
  • 1/3 cup Cucumber Finely chopped
  • 1/3 cup Grape tomatoes finely chopped
  • 1/3 cup Black olives finely chopped
  • 2 tbsp Banana peppers finely chopped
  • 1/3 cup Carrots peeled and finely chopped
  • 4 slices Crusty bread toasted

Dressing

  • 1 tsp Apple cider vinegar
  • 4 tsp Extra-virgin olive oil
  • 1/2 tsp Dijon mustard
  • 1/4 tsp Dried oregano
  • 1/4 tsp Dried basil

Instructions

  • Lay down the romaine and place chopped cucumbers, tomatoes, olives, banana peppers, and carrots on top.
  • Whisk together all of the dressing ingredients in a bowl. Season with salt and pepper to taste.
  • Pour the dressing over the salad and serve with bread.
