Chocolate Mint Bites

Ingredients

  • 7 Dates
  • 3 tbsp Almond butter
  • 3 tbsp Cacao powder
  • pinch Salt
  • 1 tsp Mint extract
  • 1/2 cup Semisweet chocolate chips melted

Instructions

  • Add the dates and almond butter to a food processor or blender and blend until you have an even mixture (add a tablespoon of milk at a time as needed to smooth the mixture out to make it blendable). Add the cocoa powder, salt, and mint and blend again to combine.
  • Place the mixture onto a piece of plastic wrap. Fold up the plastic wrap and form the mixture into a square or rectangle about a 1/2 inch thick. Freeze for 30 minutes, then cut into even portions.
  • Melt the chocolate in 20 second increments in the microwave, stirring after each time until the smooth and melted.
  • Dip each one into the melted chocolate, then place back onto the plactic wrap and onto a plate. Refrigerate until the chocolate is set before serving.
