Preheat the oven to 350°F (177°C). While the oven is heating, prep the croissant.
Prep the ingredients per the instructions above.
Mix the melon with mint in a bowl.
Make the croissants: Warm the croissant in the oven for 3 to 5 minutes. While baking, make the coffee and melt the chocolate.
Make the coffee according to the directions on the coffee maker.
Melt the chocolate in a microwave-safe bowl at 20-second intervals, stirring after each time, until smooth. Do not overheat or the chocolate will burn and clump up.
Spread the melted chocolate inside both halves of the croissant, then put both halves together and drizzle some over top.
Serve: Transfer the croissant to a plate. Enjoy with melon and coffee.
