Prep all ingredients as listed.
Preheat the oven to 350°F (175°C). Place the croissants on a baking tray and warm them in the oven until lightly crisped and heated through.
Place the dark chocolate chips in a microwave safe bowl. Microwave in 20 second intervals, stirring each time, until the chocolate is fully melted and smooth.
Carefully open each croissant and spoon the melted chocolate inside. Add a little extra chocolate on top if desired.
Heat the extra-virgin olive oil in a skillet over medium heat. Add the chopped turkey sausage and cook until lightly browned.
Add the chopped green bell pepper to the skillet and sauté until softened, about 2 to 3 minutes.
In a bowl, whisk the eggs with salt and black pepper. Pour the eggs into the skillet and cook, stirring gently, until the eggs are just set and fluffy. Remove from heat.
Brew and prepare the coffee to your liking.
Serve the dark chocolate croissants with the scrambled eggs and coffee.
