Chimichurri Meatballs

Ingredients

  • 1 cloves Garlic peeled
  • 1/4 cup Fresh parsley whole leaves stems discarded
  • 1/4 cup Fresh cilantro whole leaves stems discarded
  • 1 tsp Lemon juice
  • 2 tbsp Extra-virgin olive oil more if needed
  • 1/4 tsp Red pepper flakes
  • 1/2 pound Ground beef
  • 1/4 cup Seasoned Panko bread crumbs
  • 2 tbsp Milk
  • 1 tsp Worcestershire sauce
  • 1/4 tsp Ground cinnamon
  • 2 slices Crusty bread drizzled with oil and grilled or toasted

Instructions

  •  In a food processor or blender, add the garlic, parsley, cilantro, lemon juice, and oil. Season with salt and red pepper flakes. Pulse until finely chopped. Taste and adjust any of the ingredients as needed. Then set aside.
  • Preheat the oven to 350 degrees.
  • In a bowl mix together the beef, breadcrumbs, milk, Worcestershire sauce, cinnamon, salt, and pepper until fully combined. Then form into even sized balls.
  • Preheat a saute pan on medium heat. Once hot, add the oil. Brown the meatballs well on all sides. Transfer the pan to the oven and cook to an internal temperature of 150 degrees using a thermometer.
  • Spoon the sauce over top before serving. Serve with bread.
