Chicken White Bean

Ingredients

  • 4 tbsp Extra-virgin olive oil
  • 1/2 lb Chicken breast boneless skinless butterflied
  • 1/2 cup Onion diced
  • 6 cloves Garlic half minced, half sliced thin
  • 2 cups Chicken broth
  • 2 cups White beans
  • 3 tbsp Fresh sage chopped
  • 1 head Broccoli cut into bite sized florets
  • 4 hunks Crusty bread warmed in a 300 degree oven for 3 to 5 minutes right before serving if desired

Instructions

  • Heat a nonstick pan over medium heat. Once hot, add half of the oil. Sear the chicken on both sides deep golden brown to an internal temperature of 160 degrees using a thermometer. Once cooked set aside on a cutting board to rest, slice before serving.
  • To the same pan add the remaining oil. Sauté the onion and garlic until golden brown. Add in the broth, beans, sage, and broccoli. Simmer until the flavor concentrates and the broccoli is tender. Season with salt and pepper to taste.
  • Toss in the sliced chicken. Serve with bread.
