Ingredients

Chicken Spagetti

  • 4 oz Spaghetti
  • 1 tsp Extra-virgin olive oil
  • 8 oz Chicken breast boneless skinless diced into bite-sized pieces
  • 1/4 cup Onion diced
  • 2 cloves Garlic minced
  • 1/4 tsp Red pepper flakes
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 2 cups Marinara sauce
  • 2 TBSP Parmesan cheese grated

Arakas Latheros

  • 2 tsp Extra-virgin olive oil
  • 1/2 cup Onion diced
  • 2 cups Green peas
  • 1/2 cup Water
  • 1 TBSP Tomato paste
  • 1/2 TBSP Fresh dill chopped
  • Salt to taste
  • Black pepper to taste

Lemon Sparkling Water

  • 24 oz Sparkling water cold
  • 1 Lemon sliced
  • Ice cubes for serving

Instructions

  • Prep the ingredients as listed above.
  • Bring a pot of water to a boil over high heat. Add spaghetti and cook according to package directions. Drain the pasta.
  • Heat oil in a large skillet over medium heat. Sauté chicken until golden brown on all sides. Add onion and cook until softened, about 3 minutes. Add garlic, red pepper flakes, salt, and black pepper. Stir for 1 minute. Stir in marinara sauce and bring to a simmer, stirring occasionally until hot. Toss the sauce with spaghetti and sprinkle with parmesan.
  • Heat olive oil in a medium pot over medium heat. Sauté onion until soft. Add green peas and stir to coat. Stir in water and tomato paste. Cover and simmer until most of the water evaporates. Remove from heat and stir in dill. Season with salt and black pepper.
  • Combine sparkling water and lemon and serve with ice if desired.
  • Serve the chicken spaghetti with the arakas latheros and lemon sparkling water.
