Chicken Satay

Equipment

  • 6 inch wooden skewers

Ingredients

  • 1 pound Chicken breast boneless skinless
  • 1 tsp Garlic powder
  • 1/4 cup Ketchup
  • 2 tbsp Lemon juice
  • 1 tsp Sriracha sauce
  • 2 tbsp Brown sugar
  • 2 tbsp Worcestershire sauce
  • 1/4 cup Reduced-sodium soy sauce
  • 2 tbsp Scallions chopped

Instructions

  • Slice the chicken into 1/2 inch thick long strips. Toss them in a bowl with all ingredients, and season with salt and pepper. Marinate for 20 minutes or up to 4 hours.
  • Heat a grill or grill pan over medium heat. Cook to an internal temperature of 160 degrees.
  • Serve over salad (see recipe).

Notes

Steak Internal Temperatures:
  • Rare: 115 - 120 degrees F
  • Medium Rare: 125 - 130 degrees F
  • Medium: 135 - 140 degrees F
  • Medium Well: 145 - 150 degrees F
  • Well Done: 160 degrees F
