Pull the kale leaves off from the tough stems and discard the stems. Chop the kale into small pieces. Transfer the kale to a bowl.
In a small bowl, whisk the dressing ingredients together and pour the dressing over the kale, toss until the it is evenly coated with dressing and let it sit until you are ready to serve. Season with salt and pepper.
To serve top the dressed kale with cranberries, macadamia nuts, and blue cheese.
