Chicken Chili

Ingredients

  • 1 lb Ground chicken
  • 1/2 Onion diced
  • 1 Green bell pepper diced
  • 1 Jalapeño pepper diced
  • 3 tbsp Chili powder
  • 2 tbsp Ground cumin
  • 2 tbsp Paprika
  • 14 oz Canned diced tomato can
  • 1 cups Chicken broth
  • 8 oz White beans rinsed and drained
  • 4 tbsp Sour cream
  • 8 tbsp Cheddar cheese shredded

Instructions

  • In a large pot over medium heat start to brown ground chicken, breaking up the chunks into smaller pieces, about 5 minutes. Add in onions, peppers, and all spices. Cook for another 5 minutes mixing everything together. Add crushed tomato, chicken broth, salt and pepper. Simmer for about 35 minutes with a vented lid (half on half off). Stir in the beans 2 minutes before pulling the chili off the heat. Taste and add salt and pepper if needed.
  • Serve with sour cream, and cheddar cheese on top.
