Chicken Cheddar Wrap

Ingredients

  • 3/4 pound Chicken breast boneless skinless cut into thin strips
  • 4 oz Cheddar cheese
  • 1 tbsp Extra-virgin olive oil
  • 4 tbsp BBQ sauce
  • 1/2 Red onion sliced thin
  • 1/4 cup All-purpose flour
  • 1/4 cup Canola oil
  • 8 lettuce leaves
  • 12 slices tomato
  • 4 Whole wheat tortilla 8 inch
  • 4 oz Potato chips
  • 4 pickles halved

Instructions

  • In a small pot heat the canola oil on medium heat. Place the sliced onion in a bowl of water for 10 - 15 seconds and drain. Place the onion into the flour and coat well. Add the coated onion into the hot oil and cook for 2 - 3 minutes or until golden brown and crispy. Place on a paper towel lined plate and set aside.
  • Heat the olive oil in a nonstick pan over medium-high heat, add the chicken strips. Cook until no longer pink inside (about 5-6 minutes).
  • Spread the bbq sauce on the wrap and layer with lettuce, tomato, chicken, cheddar, and crispy onions. Fold in the ends and roll up tightly. Cut in half and serve with chips and pickles.
