1tbspExtra-virgin olive oil
4tbspBBQ sauce
1/2 Red onionsliced thin
1/4cup All-purpose flour
1/4 cupCanola oil
8lettuce leaves
12slices tomato
4Whole wheat tortilla8 inch
4ozPotato chips
4pickles halved
Instructions
In a small pot heat the canola oil on medium heat. Place the sliced onion in a bowl of water for 10 - 15 seconds and drain. Place the onion into the flour and coat well. Add the coated onion into the hot oil and cook for 2 - 3 minutes or until golden brown and crispy. Place on a paper towel lined plate and set aside.
Heat the olive oil in a nonstick pan over medium-high heat, add the chicken strips. Cook until no longer pink inside (about 5-6 minutes).
Spread the bbq sauce on the wrap and layer with lettuce, tomato, chicken, cheddar, and crispy onions. Fold in the ends and roll up tightly. Cut in half and serve with chips and pickles.
