Cajun Sausage Pasta

Ingredients

  • 1/2 tsp Salt
  • 4 oz Penne pasta
  • 1 TBSP Extra-virgin olive oil
  • 8 oz Andouille sausage links sliced into medallions
  • 1 cup Cremini mushrooms thinly sliced
  • 1/2 Red bell pepper thinly sliced
  • 1/2 Yellow bell pepper thinly sliced
  • 3 cloves Garlic minced
  • 1/2 cup Fire roasted tomatoes diced
  • 2 cups Chicken broth
  • 2 TBSP Cajun seasoning as needed to taste
  • 3 oz Cream cheese
  • 2 slices Crusty bread toasted
  • 2 TBSP Fresh parsley finely chopped
  • Red pepper flakes (optional)

Sparkling Water

  • 16 oz Sparkling water cold

Instructions

  • Prep sausage and vegetables per instruction above.
  • Cook pasta: Bring a pot of water to a boil, add the salt. Cook the pasta according to the directions on the package. Once tender, drain well and set aside. While cooking, prep ingredients.
  • Cook sausage: Heat a large skillet or braiser over medium heat. Once hot, add the oil and sausage medallions. Sear on both sides until they crisp up a bit, about 4 minutes. Remove and set aside on a paper towel lined plate. Leave the remaining oil in the pan.
  • To the same skillet, add the mushrooms, peppers, and garlic and sauté for about 3 minutes until the mushrooms begin to brown. Add the cooked pasta, fire-roasted tomatoes, chicken broth, and cajun seasoning. Stir just until everything is evenly combined, then place a lid on top and allow the broth to come up to a boil.
  • Add the cream cheese to the skillet in chunks and stir until it has completely melted and created a thick and creamy sauce.
  • Toast the bread in a toaster oven.
  • Finish the pasta: Add the sausage back into the skillet, give everything another big stir.
  • Serve: Top the pasta with parsley and red pepper flakes and enjoy with bread and sparkling water.

Notes

Pro Tip: DO NOT use a cajun seasoning blend that lists salt as its first ingredient. You will end up with a very salty plate of pasta if you do.
