Preheat a panini style grill. Lightly grease with nonstick spray.
In a bowl mix the mayo and garlic. Season with salt and pepper. Spread the mixture onto each slice of bread.
In a bowl mix the chicken, cajun, Worcestershire sauce, and salt until combined well. Form into equal patties.
Heat a non-stick pan over medium heat, Once hot, add the oil and peppers. Saute until soft and golden brown. Remove from the pan and set aside.
Add the chicken patties to the pan and cook golden brown on both sides to an internal temperature of 160 degrees using a thermometer.
Place some of the cheese on the bread, peppers, chicken patty, a little more cheese, and top slice of bread.
Cook the sandwich on the panini grill until golden brown on both sides.(Alternatively, heat a non-stick pan over medium-low heat. Lightly grease with nonstick spray as needed. Cook the sandwich until golden brown on both sides).
