Butternut Squash and Peas

Ingredients

  • 2 cups Butternut Squash peeled, seeded, and cut into small bite sized cubes
  • 1 Tbsp Extra-virgin olive oil
  • 1/4 tsp Garlic powder
  • 1/4 cup Green Peas

Instructions

  • Preheat oven to 400 degrees F
  • Toss butternut squash with olive oil, garlic powder, salt and pepper on a baking sheet.
  • Roast in the preheated oven until the squash is tender and lightly browned, about 20 to 30 minutes. Toss in the peas and cook for another 3 to 5 minutes.
  • Season with salt to taste if needed.
