Heat the oil in a nonstick pan on medium heat. Saute the chicken in the pan while breaking it up into smaller pieces until it is no longer pink and cooked through. Then set aside.
Spread the buffalo wing sauce onto the bagels. Top with chicken, mozzarella, and blue cheese.
Lay on a foiled-lined baking sheet and place under the broiler until melted and golden brown, rotating the pan every few minutes. (Keep a watchful eye while using the broiler.)
Garnish with parsley. Serve with celery sticks and ranch.
