Prep the ingredients per the instructions above.
Pat chicken cubes dry with a paper towel and season with garlic powder, salt, and pepper.
In a large nonstick skillet, heat olive oil over medium-high heat. Sauté the chicken until it is no longer pink in the middle (to an internal temperature of 160°F (71°C) using a thermometer).
Remove chicken from heat and place into a mixing bowl. Add in buffalo sauce and toss to coat well.
Lay tortillas on a clean flat surface. Layer with lettuce, tomatoes, pickles, chicken, and blue cheese.
Fold in the ends and roll up tightly. Cut in half.
In a large glass or pitcher, mix together iced tea and lemonade for Arnold Palmer. Serve over ice if desired.
