Preheat the oven broiler on low.
Mix together the tomatoes, onion, garlic, balsamic vinegar, basil, and half of the oil. Season with salt and pepper to taste and spread onto the bread. Place on a foil-lined baking sheet.
Heat the oil in a non-stick pan over medium heat. Crack the eggs into the pan. Cook until the whites of the eggs start to set and become firm, then place the eggs onto the bread and top with cheese.
Place under the broiler for 2-4 minutes to melt the cheese and finish firming up the eggs. Season with salt and pepper.
In the meantime, heat a non-stick pan over medium heat and brown the chicken sausage on both sides.
Serve the toast with chicken sausage and grapes.
