Prepare all ingredients as described above.
Cook Porridge: Place oats, milk, cream, and vanilla pod with seeds in a saucepan over low-medium heat. Stir frequently for 10–15 minutes until oats are tender and the mixture is thick and creamy. Add a little more milk if it becomes too thick.
Make Brown Sugar Apples: In another saucepan, add apple wedges, brown sugar, and honey. Cook over medium heat, stirring occasionally, for about 10 minutes until the apples are tender, golden, and sticky.
Make the Pumpkin Spice Oat Milk Latte: Brew the coffee. In a small pot or milk frother, heat oat milk, pumpkin purée, maple syrup, pumpkin spice, and vanilla over medium heat, whisking until smooth and steaming. Remove from heat and stir in coffee or espresso. Optionally froth the milk mixture using a frother or whisk for extra foam. Pour into cups.
Serve: Serve the porridge topped with apples, fresh fruit, and the latte on the side.
