Breakfast Toast

Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 2 tbsp Jalapeño pepper diced (optional)
  • 4 Eggs beaten
  • 2 tbsp Feta cheese crumbled fine
  • 1/4 cup Grape tomatoes diced
  • 2 slices Sourdough bread toasted (or bread of your choice)
  • 1 Pear sliced (Check the Fruit guide to substitute seasonal fruits)
  • Fresh cilantro garnish

Instructions

  • Heat the oil in a nonstick pan on medium heat. Saute the pepper until it softens.
  • Add the eggs, cheese, and tomato into the pan. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist.  Season with pepper. Taste and add salt if needed. 
  • Lightly toast the bread.
  • Serve the eggs with toast and pear. Garnish with cilantro.
