Breakfast Scramble

Ingredients

  • 4 strips Bacon
  • 1/3 cup Green bell pepper diced small
  • 1/3 cup Onion diced small
  • 1 TBSP Butter
  • 4 Eggs beaten
  • 1/3 cup Cheddar cheese shredded
  • 1 slice Sourdough bread toasted
  • 2 tsp Butter
  • 1 TBSP Strawberry jam

Beverage

  • 16 oz Orange juice cold

Instructions

  • Prep ingredients per instruction above.
  • Lay the bacon into a skillet over medium heat. Cook on both sides until golden brown and crisp. Set aside on paper towels to drain excess grease.
  • Add the pepper and onions to the pan with the bacon grease. Saute until golden brown and softened.
  • Add the butter, eggs, and cheese into the pan, lower the heat to medium low. Move the eggs using quick circular motions with a spatula or wooden spoon until creamy, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste.
  • Make toast: Toast the bread in a toaster oven. Spread the butter on the toast, then spread with jam and cut in half.
  • Serve: Enjoy the eggs with bacon, toast, and orange juice.
