Heat the oil in an oven safe non-stick pan over medium heat. Crumble in the sausage. Sauté while breaking up the sausage into smaller pieces until it is no longer pink. Add in the tomatoes and season with salt and pepper. Then remove from the heat.
Add the eggs, parmesan, and cream into a lightly greased (with nonstick spray) small casserole or oven safe baking dish, stir in the sausage, and basil.
Cook in the oven until the egg is firm, a toothpick inserted into the center should come out clean, approximately 15 to 25 minutes (cooking time will vary based on the oven and depth of the cooking vessel being used). (Be careful not to overcook or it will be dried out).
Portion and garnish with basil. Serve with toast and mango.
