Heat the oil in a non-stick pan over medium heat. Add in the potatoes, paprika, salt and pepper. Sauté for about 6-8 minutes or until the potatoes start to become tender.
Grease an 8x8 inch baking dish (or appropriately sized oven safe vessel for the portions you are making) with non-stick spray. Add the potatoes, eggs, cream, and half of the cheese. Mix together and place in the oven for 10 minutes.
Switch the oven to the broiler on low.
Add the chicken sausage and cheese on the top and place inder the broiler for 10 minutes or until the eggs are firm. Let sit for a minute before portioning.
Toast the bread. Serve with apples and garnish with parsley.
