Breakfast Casserole

Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 1 large Potato peeled and shredded
  • 1 tsp Paprika
  • 8 Eggs beaten
  • 2 tbsp Heavy cream
  • 4 oz Monterey jack cheese
  • 4 oz Chicken sausage links chopped
  • 4 slices Sourdough bread toasted
  • 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)
  • 6 leaves Fresh parsley garnish

Instructions

  • Preheat the oven to 400°F.
  • Heat the oil in a non-stick pan over medium heat. Add in the potatoes, paprika, salt and pepper. Sauté for about 6-8 minutes or until the potatoes start to become tender.
  • Grease an 8x8 inch baking dish (or appropriately sized oven safe vessel for the portions you are making) with non-stick spray. Add the potatoes, eggs, cream, and half of the cheese. Mix together and place in the oven for 10 minutes.
  • Switch the oven to the broiler on low.
  • Add the chicken sausage and cheese on the top and place inder the broiler for 10 minutes or until the eggs are firm. Let sit for a minute before portioning.
  • Toast the bread. Serve with apples and garnish with parsley.
