Preheat the oven to 375°F. Line a baking sheet with parchment paper.
In a bowl, combine flour, sugar, baking powder, and salt. Work in the butter with your fingers until combined and crumbly. Fold in the buttermilk using a rubber spatula just until moist and combined. Coat your hands in flour as needed and portion the dough into biscuits (make them wider and flatter than a normal biscuit so they are big enough to fit the ingredients).
Space out the biscuits onto the prepared baking sheet. Place into oven and bake for about 15 minutes, or until cooked in the center (toothpick inserted should come out clean). Let cool for 5 minutes before slicing in half.
Heat a nonstick pan on medium heat. Brown the sausage patties on both sides. Then place in the oven and finish cooking to an internal temperature of 155 degrees using a thermometer.
Heat a nonstick pan on medium heat. Once hot, add the oil and crack the eggs into the pan and cook until they start to set. Break the yolks and flip the eggs, add the cheese, and cook until it is melted. (Cover with a lid to melt the cheese quicker) Season with salt and pepper.
Place the eggs and sausage on the biscuit. Serve with blood orange.
