Bocadillo Atun

Ingredients

Bocadillo de Atún

  • 8 oz Canned albacore tuna drained
  • 1/4 cup Mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 cup Assorted olives pitted and sliced
  • 1 TBSP Fresh parsley chopped
  • Salt to taste
  • Black pepper to taste
  • 2 Sub rolls
  • 1/2 cup Romaine lettuce shredded
  • 1 Tomato sliced
  • 1/2 Red onion thinly sliced

Sparkling Chia Fresca

  • 1/2 cup Lemon juice
  • 16 oz Sparkling water cold
  • 2 TBSP Maple syrup (or honey)
  • 1/2 tsp Chia seeds
  • pinch Salt
  • 2 sprigs Fresh mint for garnish

Sides

  • 1 cup Carrots peeled and cut into sticks (or use baby carrots)
  • 1/2 cup Hummus
  • 2 Pickle spears
  • 2 Chocolate chip cookies

Instructions

  • Prep all ingredients as listed above.
  • In a medium bowl, combine tuna, mayonnaise, Dijon mustard, olives, parsley, salt, and black pepper. Mix until well combined.
  • Optional: Lightly toast the sub rolls for extra texture.
  • Layer the bottom half of each roll with shredded lettuce, sliced tomato, sliced red onion, and the tuna mixture. Add extra olives if desired.
  • Place the top half of each roll on the sandwich and cut each sandwich in half.
  • In a pitcher or large glass, combine all the ingredients together. Stir well and let sit for 5 minutes to allow the chia seeds to expand. Stir again and garnish with fresh mint.
  • Serve the sandwich with carrot sticks, hummus, pickle spears, chocolate chip cookie, and sparkling chia fresca.
