Blueberry Lemon Shortbread Cookies

Ingredients

  • 7.5 tbsp Butter softened at room temperature
  • 1/3 tsp Lemon extract
  • 1/4 tsp Vanilla extract
  • 1/3 cup Powdered sugar
  • pinch Salt
  • 1 cups All-purpose flour
  • 1/4 cup Blueberries

Instructions

  • Beat butter, lemon and vanilla extract until creamed.
  • Add powdered sugar and salt; mix until combined.
  • Scrape bowl down and add flour while gently mixing. Scrape bowl once more and mix in the blueberries until combined.
  • Form the dough into a rectangle about 1/2 inch thick and wrap tightly with plastic wrap and chill until firm. About an hour.
  • Preheat oven to 350F (177C). Using a cookie cutter or knife cut the dough into even rounds or rectangles.
  • Space them out at least an inch apart onto a baking sheet lined with a silicone mat or parchment paper.
  • Bake for about 15 to 20 minutes, rotating the baking sheet in the oven halfway through.
  • Transfer to a wire sheet to cool before serving.
