Black Bean Flatbread

Ingredients

Black beans

  • 1 tbsp Extra-virgin olive oil
  • 2 clove Garlic minced
  • 2 tbsp Red onion minced
  • 1/2 tsp Ground cumin to taste
  • 1/2 cup Black beans with the liquid from the can
  • 1 tbsp Fresh cilantro chopped

Flatbread

  • 2 large Flatbread
  • 1/2 cup Baby spinach
  • 6 oz Deli turkey breast chopped
  • 1/3 cup Tomato diced
  • 2 tsp Cotija cheese crumbled fine
  • Fresh cilantro garnish

Lime Crema

  • 2 tbsp Sour cream
  • 1/2 tsp Lime juice

Instructions

  • Preheat the oven to 350 degrees.
  • For the black beans: Heat the oil in a saucepan over medium heat. Sauté the garlic, onion, and cumin until the onions start to soften. Add in the black beans and season with salt and pepper. Stir in about 1/4 cup of water and the cilantro. Simmer for 15-20 minutes to concentrate the flavor. Add more cumin if needed and season with salt to taste.
  • Spread the black beans onto the flatbread. Layer with spinach, turkey, tomato, and cotija. Bake in the oven until the flatbread is crisp and the ingredients are warmed through. Cut into wedges.
  • In a bowl, whisk the sour cream, lime juice, salt and pepper. Drizzle over the flatbread.
  • Garnish with cilantro.
