Ingredients

Black Bean Chicken Sausage Breakfast Burrito in Sprouted Grain Wrap

  • ¼ cup Red onion finely diced
  • ¼ cup Green bell pepper finely diced
  • ½ cup Black beans drained and rinsed
  • 2 Chicken sausage links chopped
  • 2 tsp Butter
  • 4 Eggs beaten
  • tsp Salt
  • tsp Black pepper
  • 2 Sprouted grain wraps 8–10 inch (e.g., Ezekiel brand)
  • ½ cup Mexican cheese blend optional

Fruit

  • 1 cup Fresh fruit e.g. pineapple chunks, berries, or apple slices

  • 16 oz Orange juice cold

Instructions

  • Prepare the Ingredients as instructed above.
  • Cook the Sausage: Heat a skillet over medium heat. Add sliced chicken sausage and sauté for 3–4 minutes until lightly browned. Remove and set aside.
  • Cook the Veggies: In the same skillet, add butter. Sauté red onion and bell pepper for 2–3 minutes until softened. Return the sausage to the skillet and stir to combine.
  • Scramble the Eggs: Pour in the beaten eggs. Stir gently until eggs are just set, about 2–3 minutes. Season with salt and black pepper. Remove from heat.
  • Warm the Wraps: Heat the sprouted grain wraps in a dry skillet for 15–20 seconds per side or microwave wrapped in a damp paper towel for 20 seconds until soft.
  • Assemble the Burritos: Divide the egg and sausage mixture and black beans between the two wraps. Top with cheese if using. Fold in the sides and roll tightly into burritos. Slice in half if desired.
  • Serve: Plate the burritos with the fresh fruit on the side and pour orange juice into glasses. Enjoy your breakfast!
