Cook the Veggies: In the same skillet, add butter. Sauté red onion and bell pepper for 2–3 minutes until softened. Return the sausage to the skillet and stir to combine.
Scramble the Eggs: Pour in the beaten eggs. Stir gently until eggs are just set, about 2–3 minutes. Season with salt and black pepper. Remove from heat.
Warm the Wraps: Heat the sprouted grain wraps in a dry skillet for 15–20 seconds per side or microwave wrapped in a damp paper towel for 20 seconds until soft.
Assemble the Burritos: Divide the egg and sausage mixture and black beans between the two wraps. Top with cheese if using. Fold in the sides and roll tightly into burritos. Slice in half if desired.
