Ingredients

Black Bean Chicken Sausage Breakfast Burrito in Whole Wheat Wrap

  • 2 Chicken sausage links chopped
  • 2 tsp Butter
  • ¼ cup Red onion finely diced
  • ¼ cup Green bell pepper finely diced
  • 4 Eggs beaten
  • tsp Salt
  • tsp Black pepper
  • 2 Whole grain wrap 8–10 inch
  • ½ cup Black beans drained and rinsed
  • ½ cup Mexican cheese blend optional

Fruit

  • 1 cup Fresh fruit e.g. pineapple chunks, berries, or apple slices

OJ

  • 16 oz Orange juice cold

Instructions

  • Heat a skillet over medium heat. Add the chopped chicken sausage and sauté for 3–4 minutes until nicely browned. Add the red onion and green bell pepper and saute for 2–3 minutes until softened.
  • Pour in beaten eggs. Stir gently until eggs are just set, about 2–3 minutes. Season with salt and black pepper. Remove from heat.
  • Warm the whole wheat wraps in a dry skillet for 15–20 seconds per side or microwave wrapped in a damp paper towel for 20 seconds until soft.
  • Divide the egg, sausage mixture, and black beans evenly between the wraps. Top with cheese if using. Fold in the sides and roll tightly into burritos. Slice in half if desired.
  • Serve the burritos with fresh fruit and orange juice. Enjoy your breakfast!
