Ingredients

Black Bean Breakfast Burrito

  • 2 tsp Butter
  • ¼ cup Red onion finely diced
  • ¼ cup Green bell pepper finely diced
  • 4 Eggs beaten
  • tsp Salt
  • tsp Black pepper

To Serve

  • ½ cup Mexican cheese blend optional
  • ½ cup Black beans drained and rinsed
  • 2 Whole wheat tortilla (8-10 inch)

Fruit

  • 1 cup Fresh fruit e.g. pineapple chunks berries or apple slices

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prepare the Ingredients: Dice the red onion and green bell pepper. Drain and rinse the black beans. Prepare the fresh fruit as needed.
  • Cook the Veggies: Heat butter in a medium nonstick skillet over medium heat. Add diced red onion and bell pepper, sautéing until softened, about 2 minutes.
  • Scramble the Eggs: Add the beaten eggs to the skillet with the veggies. Cook, stirring gently, until just set, about 2–3 minutes. Season with salt and black pepper, then remove from heat.
  • Warm the Tortillas: Heat the whole wheat tortillas in a skillet over medium heat for 15–20 seconds per side, or microwave them wrapped in a damp paper towel for 20 seconds, until pliable.
  • Assemble the Burritos: Lay each tortilla flat. Portion the scrambled eggs and black beans down the center. If desired, sprinkle with cheese. Fold in the sides and roll up into a burrito. Cut in half.
  • Serve: Plate the burritos with fresh fruit on the side and orange juice.
