Prep all ingredients per the instructions above.
Heat a saute pan on medium heat. Add the oil and brown the beef along with the cumin, paprika, and chili powder. Break it up into small pieces until it is no longer pink. Season with salt and pepper to taste. Then set aside.
Make the guacamole: Mash the avocado with a fork. Add the remaining ingredients (except the chips) and stir them together. Season with salt and pepper to taste. Cover and transfer to the fridge until you are ready to serve.
Warm the taco shells on both sides in a nonstick pan over medium heat.
Assemble the tacos: Fill the taco shells with beef, lettuce, tomatoes, and cheese blend. Garnish with cilantro.
Serve: Enjoy the tacos with hot sauce (if using), sour cream, chips and guacamole, and beer.
