Beef Picadillo

Ingredients

  • 1 lb Ground beef
  • 1 medium Potatoes peeled and diced small
  • 1/2 Onion diced
  • ½ Green bell pepper diced
  • 4 cloves Garlic finely chopped
  • 2 tbsp Ground cumin
  • 1/2 cup White wine
  • 12 oz Tomatoes diced
  • 4 tbsp Gold raisins
  • 2 tbsp Capers drained
  • ½ cup Green olives halved

Instructions

  • In a non-stick pan over medium heat, brown the ground beef breaking it up into smaller pieces with a spatula. Add in the potatoes, onion, peppers, garlic, and cumin. Season well with salt and pepper.
  • Cook for about 5 minutes, until the vegetables are soft. Add the wine, tomatoes, raisins, capers, and olives cover with a lid and simmer for 15 minutes.
  • Remove the lid. Check the potatoes are soft (a fork can easily pierce into the potato). Taste and adjust the seasonings however needed. Simmer for another 3-5 minutes to evaporate excess liquid and concentrate the flavor. Serve.
