- 4 Pita bread
- 2 cups Spring mix
- 8 slices Tomato
- 12 oz Deli roast beef
- 4 tbsp Feta cheese
- 2 oz Potato chips
- 2 Pickles halved
Sauce
- 1/2 cup Greek yogurt
- 1/4 cup Cucumber chopped
- 2 tbsp Red onion chopped
- 1/4 cup Red bell pepper chopped
- 1 clove Garlic
- 2 tsp Lemon juice
- 2 tbsp Fresh dill chopped
Place all of the ingredients for the sauce into a blender. Blend until smooth. Season with salt and pepper to taste. Set aside.
Warm the pita on both sides in a pan over medium heat for approximately 30 seconds per side.
Layer the pita with spring mix, tomato, drizzle the sauce, beef, and top with feta. Fold in half and serve with chips and pickles.
