Beef Enchilada's

Ingredients

  • 6 oz Ground beef
  • 1/2 tsp Garlic powder
  • 1/2 tsp Ground Cumin
  • pinch Dried Oregano
  • 1/2 tsp Chili powder
  • 1/2 tsp Paprika
  • 3 cups Chicken broth
  • 2 tbsp Tomato Paste
  • 4 Soft taco shells
  • 2 tsp Cotija cheese
  • Fresh cilantro garnish

Instructions

  • Preheat the oven broiler on low.
  • Heat a pot on medium heat. Once hot, crumble in the beef, garlic powder, cumin, oregano, chili powder, and paprika and brown while breaking it up into smaller pieces until it is no longer pink. Whisk in the broth and tomato paste, until combined. Bring to a simmer until the liquid reduces and thickens. Taste and adjust the seasoning with salt as needed.
  • Use a slotted spoon to portion the beef into the tortilla then roll up tightly. Spoon the sauce over top and sprinkle with cheese.
    Broil until the cheese is melted.
  • Garnish with cilantro.
