Preheat oven to 350°F (177°C). Grease or spray a small loaf pan (about 8x4 inch) with nonstick spray.
Prep the banana and walnuts per instruction above.
In a medium bowl whisk together the flour, baking soda, ground cinnamon and salt.
In another medium bowl, using a stand or hand mixer on medium-high to beat the butter and sugar together until smooth and creamy. Turn the mixer to medium-low speed and beat in the egg until incorporated. Beat in the mashed bananas and vanilla extract.
Turn the mixer to low and add the dry ingredients to the wet ingredients beating just until incorporated. Do not overmix the batter. Use a spoon to stir in the nuts just until combined. Transfer to the greased loaf pan and place in the oven.
Bake for about 25 to 35 minutes or until a toothpick inserted in the top comes out clean. Cool in pan for 5-10 minutes and then remove.
Prepare the coffee to your liking.
To serve: Cut the bread into slices and butter. Enjoy with cherries and coffee.
Notes
Do not overmix the bread as this can make the loaf tough. The mixer should be on low when the flour mixture is incorporated and should only be mixed until combined.
Wrap the remaining bread tight and freeze or enjoy at your leisure.
