Preheat the oven to 425°F (220°C).
Prep peach per instruction above.
Combine peach slices, brown sugar, and cinnamon in a bowl; gently toss to coat the peaches well.
Beat eggs, milk, flour, vanilla extract, salt, and nutmeg together in another bowl until well-combined but a little lumpy.
Melt butter in a cast-iron skillet on medium heat. Pour batter into skillet. Top batter with the peach mixture.
Bake until set in the middle, about 20 minutes.
Serve: Portion the pancake, top with yogurt, and enjoy with milk.
