Baked Eggs and Ham

Ingredients

  • 2 tsp Extra-virgin olive oil plus more for finishing
  • 4 oz Deli ham chopped
  • 1 tbsp Red onion diced small
  • 1 tbsp Butter
  • 1/4 cup White cheddar cheese shredded
  • 2 tbsp Heavy cream
  • 4 Eggs
  • 1 tbsp Scallions chopped
  • 2 slices Sourdough bread toasted
  • 1/2 cup Strawberries sliced (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • Preheat oven broiler on low.
  • Heat an oven safe nonstick pan on medium heat. Once hot, add the oil, ham, and onion. Saute until the ham is browned and onion is soft then remove from the heat.
  • Add the butter, cheese, and cream into the pan then carefully crack the eggs in. Season with salt and pepper. Place the pan underneath the broiler for about 4 to 6 minutes until the whites of the eggs are firm and yolks are still soft.
  • Portion, drizzle with a little olive oil, serve with toast and strawberries.
