Place a skillet over medium heat. Cook the bacon for about 5 - 7 minutes on one side, then flip and cook for another 3 - 5 minutes until crispy. Remove from the skillet allowing it to drain on paper towels.
While the bacon cooks, combine mangoes, yogurt, milk, cardamom powder, and sugar in a blender. Blend until smooth. Adjust the sweetness and consistency by adding more sugar, milk, or mango, along with a splash of water if needed. Pour the mixture into glasses.
Toast the bread. Set aside.
Add the butter to a skillet over medium heat. Crack the eggs into the skillet and cook until the white is firm but the yolks are very runny to act as a sauce, then flip over and top with cheese. Cook until melted, about 1 minute longer. Season with salt and black pepper.
Layer the bread with bacon and eggs topped with cheese. Place the other half of the bread on top. Cut in half.
Serve the sandwich with the mango lassi and clementine segments.
