Baby Spinach Orange Cashew Salad

Ingredients

  • 1/4 cup Extra-virgin olive oil
  • 3 Tbsp Rice wine vinegar
  • 2 tsp Honey
  • 4 cups Baby spinach
  • 2 Oranges peeled and separated
  • 1/3 cup Cashews halved or chopped

Instructions

  • Whisk oil, vinegar, honey, and a pinch of salt and pepper in a bowl.
  • Lay down spinach with mandarin oranges and cashews on top.
  • Dress salad and serve.
