Asparagus Mushroom Hash

Ingredients

  • 2 cups Asparagus cut into 1 inch spears
  • 2 tbsp Extra-virgin olive oil
  • 1 cloves Garlic minced
  • 1 cup Mushrooms sliced

Instructions

  • Trim 1 inch off the bottom of the asparagus and discard, then cut the rest into 1 inch long spears diagonally.
  • Heat the oil in a non-stick pan over medium heat.
  • Add in the garlic, asparagus, and mushrooms. Sauté until the mushrooms and asparagus are tender to your liking. Season with salt and pepper to taste.
